Call me a hipster all you want (ugh stop wearing glasses without lenses in them, you’re pretty much making fun of my disability of being super blind, you darn hipsters and your jeans are way too tight as are your shirts and for goodness sakes, please shower). Anyway …
Recently online, I found this genius idea for using the mason jar to hold your salad for lunch at work. Absolutely genius!
Salad Dressing (if any) first on the bottom. I put in a balsamic vinaigrette for this one.
Sturdier vegetables such as cucumbers, onions, carrots and I even put my beans there. You could also use things like onions.
Other vegetables such as tomatoes.
Leafy Greens. I used a spring mix here.
When you’re ready to eat, grab a bowl or plate then turn the whole mason jar upside down and pour out the goods:
Some other ideas I have include peanut satay spicy tofu with carrots, scallions, cilantro, broccoli and leafy greens for a Thai style salad mason jar. Or you can do a Mexican style with beans, cilantro, guacamole, salsa, greens and some corn. There are so many ways you can go with this! Each week you can make enough to last you throughout your work lunches and just throw it (gently put it away) into your lunch bag and you’re good to go!
